Cabbage Soup

I harvested my garden this morning and I was planning on making a fresh vegetable lasagna but ended up making some cabbage soup instead!


2 cups of spaghetti sauce (I used homemade)

4 cups of salsa (I used homemade)

2 roasted bean patties (homemade recipe) note you can also just add cooked hamburger.

2 cups of shredded cabbage


Add everything except the cabbage to a pot and cook on medium heat until fully heated. Now turn down the heat to a simmer until add the cabbage. Stir well to incorporate the cabbage into the sauce.


Cook on simmer until the cabbage starts to soften about 30 minutes.


Remove from heat and serve. Store in air tight container in the refrigerator for up to a week or freeze for later use, up to two months.
