Purple Cabbage Coleslaw

I absolutely love coleslaw but I'm kind of picky about the flavours that I like in a coleslaw.
This recipe is a super simple recipe with a few fresh ingredients and even a homemade dressing that gives it an extra boost of flavour.
Ingredients
1 small purple cabbage shredded
1 small onion minced
2 large carrots peeled and shredded
1 green apple peeled and diced
1/3 cup of dried cranberries
Add all ingredients to a bowl and mix well then set aside.
Coleslaw Dressing
1 cup of mayonnaise (use vegan if necessary)
2 tablespoons of Dijon mustard
2 tablespoons of apple cider vinegar
1 teaspoon of salt
1 teaspoon of pepper
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 tablespoon of sugar
Add all ingredients to a bowl and whisk together well until everything is blended and smooth. I used my immersion blender for it.
Once blended add to the cabbage mixture and stir well until everything is evenly coated. Chill covered in fridge 30 minutes before serving.
Serve and enjoy. Keep leftovers stored in a sealed container in the fridge for up to 1 week.
