Rice Cereal

Did you know that you can make your very own rice cereal?
It’s a little bit of a process but completely worth the effort and savings!
Ingredients
1 1/2 cups of Jasmine Rice
Instructions
First thing you need to do is wash the rice with cold water until the water runs clear. I did 3 rinses for this recipe.
After the rice is washed, allow the rice to soak in water for approximately 10 minutes. Strain rice.
Add 1 and a 1/2 cups of water to a pot and bring the water to a full boil. Add rice to boiling water and stir then turn heat down to simmer and cover the pot with a lid and allow to simmer 10 minutes until the water has fully absorbed into the rice. Remove from heat and fluff rice with fork.
Now you’ll need to dry the rice before you can make the cereal. You can use your oven, preheat oven to 250°F. Using a large baking sheet lined with parchment paper add the coked rice and spread it out so that the rice isn’t sticking together.
Bake for 2 to 2 1/2 hours or until dry to the touch and all the moisture has evaporated. Let cool completely (rice should be dry and hard before frying).
You could also use a dehydrator for this process. I used my Ninja Air Fryer at 180°F for about 2 hours. The idea is that the rice is completely dried out before frying or using salt, to make the rice cereal.
Pour enough oil into large saucepan to come 2 inches up side; heat over medium-high heat until instant-read thermometer reaches 425°F. Add a few grains of cooked rice; if oil is hot enough it will start to puff up instantly.
Working in batches, add rice to a metal wire sieve, carefully add rice into the hot oil; fry for 3 to 6 seconds or until puffed. Carefully, transfer rice to paper towel-lined baking sheet. Let cool completely.
If you want to make it with salt, heat a pan, check if it's hot and add a bowl of cooking salt in it and cover it with a lid. Stir in intervals until the salt turns very hot and turns brownish in colour. Now pour the rice on the bed of salt and stir on high heat until rice grains start popping and turn into puff rice.
When you see all the rice grains have turned into puffs, remove from heat, pass mixture through a sieve to remove excessive salt.
