Spicy Pickled Vegetables

It's going to be that time of year again that if you grow your own vegetables, you'll likely have a bunch of leftovers veggies that need to be used up before they go bad. There's nothing that I despise more than wasting food!! With the grocery stores prices these days, I don't know how some people are surviving.
As a kid, my parents always had store bought pickled veggies in the fridge. I still remember seeing the cauliflower in a jar and I was instantly hooked!! Then as I got older, there was the same type of pickled vegetables only spicy!! At first it was a bit of a kick that I didn't expect but from then on, I have definitely preferred the spicy over plain, pickled veggies.

I had some leftover cauliflower, radishes and jalapeños that I had to use up from my regular Apple a Day Moncton order, so I decided it was the perfect time to try and make my own spicy pickled vegetables.
This recipe gave me two large jars with cauliflower, radishes and jalapeños, as well as two small jars or radishes and jalapeños.
Ingredients
3/4 of a head of cauliflower chopped up
6 medium jalapeños chopped up with seeds
1 small bag of cleaned radishes thinly sliced
2 cups of vinegar
1 cup of apple cider vinegar
4 tablespoons of sugar
1 teaspoon of garlic powder
1 teaspoon of onion powder
Instructions
Chop all vegetables and add to clean jars.
Boil all other ingredients (not the veggies) in a saucepan while stirring to make sure the sugar melts and everything is well incorporated.
Using a funnel add the hot brine to each jar until vegetables are covered, then seal the container and allow to cook before placing in the fridge.
This recipe can be eaten within 2 days but the more you let it sit the more pickled it will get, remembering that the radishes will pickle the fastest and will likely discolour the brine a little reddish.
As these are not fully canned, they will last in your fridge up to a month or longer, if they last that long!! Mine never do, so I honestly can't give an exact time of how long they would last in the fridge!! 😂 😂
