Vegan Meringue

Today I’m working with aquafaba 🙌❤️🙌

For anyone that doesn’t know what aquafaba is, it’s simply the water in the can of chickpeas.


Most people will just toss it out but did you know that you can use it to make other vegan recipes?

I use mine to make mayonnaise, as an egg replacement in baking and for a vegan meringue!!


Again, don't worry I have done all the hard work for you!!! This should whip up fairly simple and straightforward!! Just follow the steps!!!


Ingredients


1/2 cup of aquafaba (liquid from a can of chickpeas)

1/4 teaspoon of cream of tartar

3/4 cup of icing sugar

1 tablespoon of cornstarch

1/2 teaspoon of vanilla extract


Instructions


In a stand mixer with the whisk attachment


Add the aquafaba and cream of tartar and mix on medium until soft peaks form. Can take a few minutes.




Now measure out your icing sugar and add the cornstarch to the icing sugar and stir well!!! With a tablespoon, add one tablespoon of the icing sugar and cornstarch mixture to the bowl of the stand mixer and continue to whisk on a medium speed until everything is completely incorporated. Then add the vanilla and continue to whisk until you get a soft meringue.




Add meringue to a piping bag and pipe meringue on a baking sheet covered in parchment paper. Bake in oven at 220 degrees for 2 to 2 1/2 hours or

until the meringues are dry to the touch and lift easily from the parchment.



Allow to cool and place in an uncovered container for up to 7 days!!
