Vegan Sloppy Joe’s

I used to love eating Sloppy Joe's as a kid so I was super excited to figure out a vegan recipe using lentils and walnuts.

INGREDIENTS
1 cup unsalted walnuts
1 can of red lentils (drained and rinsed)
1 cup diced yellow onion
1/4 of a green pepper diced
1 tablespoon of garlic purée
1 tablespoon chili powder
1/3 teaspoon of smoked paprika
1 can of spaghetti sauce
Salt and pepper, to taste
1 teaspoon of vegetable oil
Instructions
In a small bowl, add in the walnuts along with enough lukewarm water to fully submerge the nuts about 5 minutes. Strain walnuts then add them to a food processor and pulse them once or twice.

In a pan add
Oil and heat on medium, add onion and garlic and cook until onions are tender and lightly translucent. Add green pepper and cook until soft, add lentils, strained walnuts and cook a few minutes then add all the seasonings and cook until evenly heated. Turn down heat to a simmer and add spaghetti sauce. Stir to evenly combine and allow to simmer about 10 minutes or until sloppy joes mix is fully heated.

Serve on a bun and enjoy. Refrigerate leftovers for up to 3 days.
