Fermented Ghost Pepper Honey

Ingredients


  • 1 ghost pepper sliced with seeds

  • 1 cup of creamy honey or enough to cover the pepper slices.



Instructions


  • Place the sliced ghost pepper into a wide-mason jar. Add enough honey to completely cover the pepper slices.


  • Place the lid on the jar loosely, then tuck into a dark place.


  • Every day or so, tighten the lid on the jar and flip it upside down to coat the ghost pepper with honey. Loosen the lid again when you return it to the upright position.


  • Within a week, you should see small bubbles start to form on the surface of the honey.


  • The ghost pepper will ferment for about 2 weeks. The flavor will continue to develop over time.


  • Store in a cool place for many months or even a year, if not longer.


You can use the fermented ghost pepper honey in your recipes.


Usually in ferments like this you will see bubbles, however it’s not always the case. Once fermented, the honey will be very runny.



Ghost pepper honey should not be given to babies under one year of age.
